Aquafaba meringues

Aquafaba meringues are made with just a few simple ingredients like sugar and cream of tartar, you can whip up these impressive treats that are perfect for topping pies or enjoying by themselves. The result is a light and sweet meringue that's sure to impress anyone who tries it. 

Ingredients

1⁄2 c aquafaba
3⁄4 c sugar (white sugar)
2 pn cream of tartar (about 1/2 teaspoon)
3 dr vanilla extract (optional)

Instructions

Preheat the oven to 200° F. Line a baking sheet with parchment paper.

In a large mixing bowl, whisk the aquafaba with the cream of tartar until it forms stiff peaks.

Gradually add the sugar, one tablespoon at a time, while continuing to whisk the mixture.

Once all the sugar has been added, continue to whisk for another 5-10 minutes, until the mixture is glossy and holds its shape. Stir in the vanilla extract now if using.

Using a piping bag, pipe the meringue mixture onto the prepared baking sheet.

Bake the meringues until they are dry and crisp outside, 90 minutes to 2 hours.

Notes

Aquafaba is the liquid that is left behind when you drain a can of chickpeas. Get 1 can of chickpeas (15 oz can) and drain the chickpeas reserving enough of the liquid. Use the chickpeas for other recipe.

You can use the liquid from cooking chickepas at home. You need to strain it very well. Use it at room temperature.
