Black walnut bread

A good recipe to use some of those black walnuts from Missouri.

Ingredients

3 c flour (all purpose)
1⁄2 c sugar
1 t salt
1 t cinnamon (ground cinnamon)
1⁄4 t nutmeg (ground nutmeg)
2 egg (large)
1 c milk
1⁄2 c margarine (melted)
1 c walnut (black walnuts, chopped)
  cooking fat (to grease the pan, vegetable oil spray or margarine)

Instructions

  1. Heat the oven to 350º F and grease a loaf pan.
  2. Sift together the flour, baking powder, sugar, salt, cinnamon and nutmeg in a large bowl.
  3. Whisk together eggs, milk, vanilla extract and margarine in another bowl.
  4. Add the egg mixture to the flour mixture and stir until the dry ingredients are moistened.
  5. Fold in the black walnuts.
  6. Pour the batter into the greased loaf pan. Bake in the middle rack for 1 hour, or until done.
  7. Remove from the oven when done and cool on a wire rack for 10-15 minutes before removing the black walnut bread from the pan.

Notes

Sifting the dry ingredients and mixing dry and wet ingredients can be done with a food processor, but the walnuts should be folded in by hand.
