Blueberry ketchup

Description

Blueberry ketchup goes with: Salmon, grilled chicken, duck, white cheddar and crackers.

Ingredients

2 T cooking oil (vegetable oil)
1 clv garlic
1 T ginger
1 fl oz tomato
1⁄4 c brown sugar
1 T vinegar
1 t salt
1 t pepper (peppercorns)
2 plums (clean)
2 pt blueberries (clean)

Instructions

Heat oil in a heavy-bottomed saucepan. Add the garlic and ginger and cook over a low heat for two minutes. Add onion, cook until soft and transparent, stir often. Add remaining ingredients;

Cook over medium heat until the mixture begins to simmer. Reduce heat and simmer for 30 minutes.

Remove from the heat. Allow the mixture cool slightly, then puree in a food processor or blender.

Place the puree in the pan and heat, bringing the mixture to a simmer. Cook until thick, about 1 hour.
