Exotic barbecued chicken

Chicken drumsticks marinated in a spiced blend of mango chutney and olive oil.

Ingredients

8 pce chicken (chicken drumsticks, skinless)
2 T chutney (mango chutney)
1⁄3 c olive oil
1 t nutmeg (grated or ground)
1⁄2 t anchovy (anchovy paste)
1 pn cayenne pepper (ground)
  salt (to taste)

Instructions

  1. Prepare the marinade by mixing all the ingredients in a bowl - chop small any large pieces in the mango chutney.
  2. Slash the drumsticks several times diagonally. Brush with the marinade introducing it into the cuts. Brush or spray the rack with oil and arrange drumsticks on top.
  3. Place rack at 4 inches (10 cm) from the source of heat. Broil, grill or barbecue , turning and basting with the marinade frequently, for about 10-12 minters on each side or until tender inside and browned outside.
  4. Serve hot or cold.

Notes

When the chicken is almost done, brush with a little melted butter.

Preparation time does not include marinating.

A serving would be 2 drumsticks.
