Kabak Mücver (Zucchini squash croquettes)

Turkish pancakes made with grated zucchini, onion, herbs, cheese, eggs and flour.


3 zucchini (peeled and grated)
2 onion (peeled and grated)
1 tomato (peeled and finely chopped)
1 T dill (optional, chopped fresh dill)
1 T parsley (optional, chopped fres parsley)
1⁄2 t pepper
1 t salt
1 t mint (dried mint)
4 egg (lightly beaten)
3 T flour
  cooking oil (vegetable oil, for frying)


Sprinkle the grated zucchini with salt and knead by hand to extract the liquid. Drain well.

Add onion, tomato, dill, parsley, mint, eggs, flour, salt and pepper. Mix well.

Heat oil in a frying pan. When the oil is hot, put tablespoons of the zucchini mixture, 4 or 5 at a time, and fry on both sides until golden.

Serve straight away.
