Mashed sweet potatoes

This recipe for mashed sweet potato is suitable for a low sugar diet.


3 sweet potato (scrubbed, washes, and dried)
1 1⁄2 t vanilla extract
1 pn cinnamon (ground)
1 pn nutmeg (ground)
1 T butter (or vegetable margarine)


  1. Pierce the sweet potatoes on all sides with a fork.
  2. Microwave on high for approximately 15 minutes, or steam for 30 minutes.
  3. Cut potatoes in half lengthwise and scoop the meat out into a medium sized mixing bowl. Discard skins.
  4. Mash the potato pulp with a potato masher until smooth.
  5. Add all the remaining ingredients, mixing well
