Mighty mushrooms

Healthful mushrooms make also a delicious side.

Ingredients

  seasoning (salt and freshly ground black peper)
3 T parsley (fresh leaves, finely chopped)
16 oz mushroom (porcini, shiitake and button mushrooms)

Instructions

  1. Soak dried mushrooms in a little hot water, just to cover, for 20 minutes
  2. Using a large saucepan, heat the oil, add all the mushrooms. Stir well and cover. cook gently for 5 minutes.
  3. Add garlic, coriander and season to taste. Cook another 5 minutes. The mushrooms should be tender and the liquid should be reduced.
  4. Mix in the parsley and cool slightly.

Notes

About 4 oz porcini mushrooms, 4 oz shiitake mushrooms and 8 oz button mushrooms.
