Pineapple salsa
Fruit of the tropic the pineapple is. As such it makes the pork meat to take on the Caribbean flavor.
Ingredients
1 pineapple (small, peeled, cored, cut into 3/8 inch cubes, about 1 1/4 cup diced pineapple)
1 banana (small, barely ripe, peeled and cut into 3/8 cubes)
1⁄2 c grape (seedless white grapes, halved)
1⁄2 avocado (firm avocado, peeled and cut into 3/8 inch cubes)
4 t lime juice
1 chili pepper (stemmed, seeded and minced ajalapeño chili)
1 t oregano (fresh leaves, minced)
salt (to taste)
Instructions
- Combine all ingredients, salt to taste.
- Allow to sit at room temp for 30 minutes.
- Serve along side pork loin chops.
