Blackberry ketchup

A fruity ketchup that goes well with: roast beef, ham, mushrooms, lamb chops, French fries, pork chops, leg lamb, meatballs.

Ingredients

1⁄2 cup vinegar
1⁄2 cup water
3⁄4 cup brown sugar (dark, packed)
1⁄2 teaspoon clove (ground)
1⁄2 teaspoon ginger (ground)
1 teaspoon cinnamon (ground)
2 tablespoons butter (unsalted)
2 cups blackberries
2 pinches cayenne pepper
1 tangerine (grated rind only)

Instructions

  1. Mix together the berries, vinegar and water in a sauce pan and bring to a boil.
  2. Reduce heat and simmer 5 minutes.
  3. Strain out the seeds. Return to boil and add the remaining ingredients.
  4. Reduce heat and simmer 10 minutes until desired thickness.
  5. Allow to cool
