Pepperoni spaghetti bake

Layers of creamy spaghetti and meat sauce topped with grated cheese and pepperoni slices. This is a partially prepared meal where the pasta and meat sauce are prepared in advance and frozen ready for the oven.

Ingredients

1 lb beef (chuck)
1 onion (medium, chopped)
1 bell pepper (green, small, chopped)
1 cn mushroom (drained, 4 oz can)
1 cn sauce (pasta sauce 26 oz can)
1 cn tomato sauce (8 oz can)
1 t seasoning (Italian seasoning)
1 lb pasta (spaghetti or long pasta, broken into small pieces, or pasta tubes)
3⁄4 c milk
2 egg (slightly beaten)
5 oz pepperoni (sliced pepperoni)
2 c cheese (shredded Monterrey jack)
1⁄2 c cheese (shredded Cheddar)

Instructions

Place a large pot of water over high heat. Bring to a rapid boil. Boil spaghetti as directed on the package. Drain and rinse.

Place ground chuck in a large skillet over medium high heat. Add the onion, green pepper and mushrooms. Cook until meat is browned being sure to crumble the meat. Drain.

Add the pasta sauce, tomato sauce and Italian seasoning. Stir until well combined. Simmer for 15 minutes.

Place the eggs and milk in a large bowl and blend. Place the spaghetti in the egg mixture and toss to cover.

Lightly spray a large baking dish with a non stick cooking spray. Place half of the spaghetti mixture into the bottom of the anyplace half of the meat sauce over the top of the spaghetti. Repeat for another layer.

Put the casserole in the refrigerator to cool. Once cooled, wrap with the freezer wrap. Freeze for up to 2 months.

To reheat thaw the casserole overnight in the refrigerator.

Preheat oven to 350° F. Cover the casserole with aluminum foil. Bake 45 minutes.

Uncover and top the casserole with the pepperoni and 2 cheeses to bake another 15 minutes or until cheese has completely melted.

Notes

You will need freezer wrap.

Pasta dishes are always welcomed and that's why it is a good idea to have something like this pepperoni and spaghetti casserole ready to bake.

If cooking from frozen, allow 20-30 minutes extra cooking time to defrost.
