Pipi Fritters

A New Zealand dish prepared with a local delicacy. Pipi is a kind of bay clam found in its sandy beaches.

Ingredients

2 1⁄2 lb pipi (already cooked)
1 c flour
1⁄4 t salt
1⁄4 c milk
2 egg
  cooking fat (for frying)

Instructions

Remove shells of pipi (or other shellfish) and discard. ropughly chop.

Heat a frying pan with oil in it.

Make a batter out of remaining ingredients and add the pippi (or shellfish) meat to the mixture.

Mix one more time and in the pan make pancakes out of single spoonfulls of mixture.

Notes

To prepare pipi, immerse them in fresh water overnight. Drain off water and rinse to ensure all sand is removed. Place pipi in a saucepan with 1/4 cup water. Cover and place over a medium-high heat for 3 to 4 minutes, shaking the pan at times, until pipi have opened.

If you don't have it, susbtitute pipi with other clams of similar small size.
