French beans with almonds

Green beans do not need much fuss to taste wonderful and almonds ara a great complement to their flavor. Serve French beans with almonds as a light appetizer or side dish for a roast.

Ingredients

3 c green beans (washed, ends trimmed and cut into 2 inch pieces, about 1 lb)
2 T butter
3 T almond (flaked almonds, lighlty toasted)
1⁄2 lemon (juice only)
  seasoning (salt and white pepper to taste)

Instructions

Boil beans until tender. Drain.

Heat butter in a pan until it melts, add flaked almonds, beans, lemon juice, and seasoning.

Stir to coat. Don't cook for long, 1-2 minutes, until just warmed through, would be enough.

Notes

If using frozen green beans, thaw and cook in boiling water.

You can toast almond flakes in the microwave - try 30 seconds on Medium - or the pan - try stir-frying in the butter for 1-2 minutes, on medium-low heat, before adding the beans and lemon juice, stiriing frequently so almonds and butter do not burn. You can toast the flakes on a dry skillet if it is cast-iron and it does not have a non-stick surface, or the oven, if you are cooking for a large amount of people.

For a healthier dish suitable for a strict vegetarian or vegan diet - and dairy free - substitute butter with the same amount of olive oil. If this is the case, stir fry the almond flakes in the oil until light gold; olive oil does not burn as butter does.
